I think you'll find that anime tends to have long "introductory" periods. One of my favorite shows, Trigun, literally spent the first half of the series as a strange comedy and didn't get into the really good drama until the second half. A lot of these stories were comics first, and the episodic format is designed to draw people in before the real story starts.
Bleach is a fighting show. No matter what problem we encounter in this series, it can be resolved by fighting. I'm afraid it doesn't really get more complex than that, unless you happen to like the characters. I still think you'd really enjoy Hunter X Hunter and Detective Academy Q.
